Osim u kulinarstvu, vjerskim obredima i medicini, vino se najvi\u0161e koristilo kao <a href=\"https:\/\/cuvaricevremena.eu\/index.php\/2024\/11\/06\/in-vino-veritas\/\">svakodnevno pi\u0107e<\/a>. Voda je u antici bila dosta zaga\u0111ena, pa se gotovo uvijek pila pomije\u0161ana s vinom. Jedna \u010da\u0161a takvog napitka sadr\u017eavala je tre\u0107inu vina i dvije tre\u0107ine vode. Ponekad bi ga pili toplog, a nekad s dodatkom morske soli radi smanjenja njegove slatko\u0107e.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Najpopularnije vino, kako u Rimu tako i u ostatku svijeta, bilo je ono dobiveno od bijelog gro\u017e\u0111a, ali je bilo namijenjeno visokim klasama. Ve\u0107ina stanovni\u0161tva pila je crno vino. Rimljani su pak voljeli eksperimentirati s raznim dodacima vinu. Svaka vrsta imala je specifi\u010dan okus i dodijeljen naziv. Konzumacija je uvelike ovisila o \u017eivotnoj situaciji.<\/span><\/p><p><span style=\"font-weight: 400;\">Dodatno, Rimljani su veliku va\u017enost pridavali procesu odle\u017eavanja vina. \u010cak je postojao zakon koji je propisivao termine odle\u017eavanja. Primjerice, vino je trebalo dozrijevati minimalno godinu dana. Duljina dozrijevanja odre\u0111ivala je i cijenu i presti\u017e: \u0161to je vino bilo starije, to je bilo skupocjenije.<\/span><\/p><h4><b>Drevna za\u010dinjena vina<\/b><\/h4><p><span style=\"font-weight: 400;\">Rimljani su uglavnom pili razrije\u0111eno vino, no postojale su i dvije vrste nerazrije\u0111enog. Prva vrsta zvala se <\/span><i><span style=\"font-weight: 400;\">Temetum<\/span><\/i><span style=\"font-weight: 400;\">. Radi se o svetom vinu, za koje se vjerovalo da je vino vrhovnog boga, Jupitera. Njegova konzumacija dozvoljena je samo rimskoj dru\u0161tvenoj kremi i prilikom vjerskih obreda.<\/span><\/p><p><span style=\"font-weight: 400;\">Drugo nerazrije\u0111eno vino bilo je <\/span><i><span style=\"font-weight: 400;\">merum<\/span><\/i><span style=\"font-weight: 400;\">. Njega su uzorni Rimljani izbjegavali jer \u201cse smatralo navikom provincijalaca i barbara\u201d. No, izvori ka\u017eu da su <\/span><i><span style=\"font-weight: 400;\">merum<\/span><\/i><span style=\"font-weight: 400;\"> \u010desto pili na razuzdanim fe\u0161tama, gdje je bilo po\u017eeljno odati se promiskuitetu, ili pak za lije\u010denje slomljenih srca.<\/span><\/p><p><span style=\"font-weight: 400;\">Sve ostale vrste vina bile su razrije\u0111ene. Od njih, najlo\u0161ije kvalitete bili su crna vina naziva <\/span><i><span style=\"font-weight: 400;\">posca<\/span><\/i><span style=\"font-weight: 400;\"> i <\/span><i><span style=\"font-weight: 400;\">lora<\/span><\/i><span style=\"font-weight: 400;\">. <\/span><i><span style=\"font-weight: 400;\">Posca<\/span><\/i><span style=\"font-weight: 400;\"> je bila mje\u0161avina vode i kiselog vina, koji jo\u0161 nije postao ocat. <\/span><i><span style=\"font-weight: 400;\">Poscu<\/span><\/i><span style=\"font-weight: 400;\"> je uglavnom pila rimska narodna masa. Imala je nisku razinu alkohola, pa je dozvoljena i vojnicima u vojnim kampovima. Prema <em>Corpus iuris civilis<\/em>, svaki vojnik smio je popiti litru posce na dan. Lora je bila jo\u0161 nekvalitetniji napitak. Dobivao se od ve\u0107 dva puta pre\u0161anog gro\u017e\u0111a, \u010dija bi se pre\u0161ana ko\u017ea namakala u vodi i ponovno pre\u0161ala. Loru su naj\u010de\u0161\u0107e pili robovi.<\/span><\/p><p><span style=\"font-weight: 400;\">Ugledniji Rimljani pili su aromati\u010dna vina s medom. Iako su preferirali bijelo vino, pili su ponekad i crno. Jedno od njih je klasi\u010dni crveni <\/span><i><span style=\"font-weight: 400;\">mulsum<\/span><\/i><span style=\"font-weight: 400;\">, aperitiv prije jela. Zanimljiva su i bijela vina s dodatkom cvije\u0107a. Radi se o bijelom vinu, \u010dija je slatko\u0107a postignuta medom i datuljama, a aromati\u010dnost paprom, lovorom i za\u010dinom koji se zove mastika.<\/span><\/p><p><span style=\"font-weight: 400;\">Recept glasi:<\/span><\/p><blockquote><p><span style=\"font-weight: 400;\">\u201cU bakrenu zdjelu stavi 6 sekstarija meda i 2 sekstarija vina, zagrijavaj na laganoj vatri, konstantno mije\u0161aju\u0107i sa \u0161tapom. Kada zakipi dodaj malo hladnog vina, makni s vatre. Ponovi ovo 2 ili 3 puta, ostavi da miruje do idu\u0107eg dana. Dodaj 4 unce zdrobljenog papra, 3 skrupula mastike, drahmu li\u0161\u0107a (lovora ili narda) i \u0161afrana, 5 drahmi prepr\u017eenih i na kamenu smrvljenih datulja, koje su se prethodno namakale u vinu da omek\u0161aju. Kada je ovo pravilno napravljeno, dodati 18 sekstarija bijelog vina. Jedan sekstarij odgovara 0,568 l. Jedna unca odgovara 28,349 g, a 1 drahma ima 4 g. Jedna skrupula ekvivalentna je 1,296 g.<\/span><\/p><p><span style=\"font-weight: 400;\">Zatim, mo\u017eda su vam nepoznati sastojci poput mastike i narda. Mastika je smola mediteranske zimzelene biljke tr\u0161lje. Nard je biljka ugodna mirisa koja potje\u010de s daleke Himalaje.<\/span><\/p><p><span style=\"font-weight: 400;\">Ukoliko se \u017eelite dr\u017eati striktno recepta potrebno je:<\/span><\/p><ul><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3,408 kg meda\u00a0<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">11,36 l bijelog vina<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">113,396 g mljevenog papra<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3,888 g mastike<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 g li\u0161\u0107a (lovora ili narda)<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 g \u0161afrana<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">20 g svje\u017eih datulja<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">drveni ugljen<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">bakrena zdjela<\/span><\/li><li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u0161tap za mije\u0161anje\u00a0<\/span><\/li><\/ul><p><span style=\"font-weight: 400;\">No, u ovom gastro izazovu nisam se dr\u017eala ovih velikih koli\u010dina. Recept sam smanjila 10 puta, odnosno radila sam na koli\u010dinu 1,1 litre bijelog vina i 340 g meda (manja teglica).\u00a0 S obzirom na to da u receptu ne pi\u0161e to\u010dna sorta bijelog vina niti vrsta meda, pretpostavljam da je to bilo proizvoljno, ovisno o ukusu konzumenata i dostupnosti proizvoda. Odlu\u010dila sam koristiti ono \u0161to imam kod ku\u0107e, a to su gra\u0161evina i cvjetni med doma\u0107e proizvodnje.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Za\u010dine poput papra, lovora i \u0161afrana kupila sam u lokalnoj trgovini i dodala svega prstohvat, te nekoliko komada datulja. Svje\u017eih datulja nisam imala, ve\u0107 su\u0161ene koje sam dan ranije namo\u010dila u vino. Mastiku nisam koristila. Bakrenu posudu iz recepta zamijenila sam zdjelom od inox materijala. Drveni ugljen mi tako\u0111er nije bio potreban za filtriranje jer dana\u0161nja vina se filtriraju prilikom pretakanja u ba\u010dve. Njegova je jedina \u201cmana\u201d to \u0161to se izvodi dva dana. Prvi dan pripremite mje\u0161avinu vina i meda te natopite datulje u vino. Drugi dan se dodaju preostali za\u010dini.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">No, ruku na srce, sama prilagodba recepta daje modernu verziju drevnog rimskog za\u010dinjenog vina. Pretpostavljala sam da med i datulje daju vinu slatko\u0107u. Papar i lovor u kombinaciji zasigurno ostavljaju pikantno-gorki <\/span><i><span style=\"font-weight: 400;\">after taste.<\/span><\/i><span style=\"font-weight: 400;\"> Suhi \u0161afran nikad nisam koristila u kulinarstvu, pa mi je njegov okus nepoznat. No, pomislila sam da njegova crvena boja vjerojatno pretvara \u017eu\u0107kastu boju vina u naran\u010dasto.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Prilikom izvo\u0111enja gastro izazova, prvo \u0161to me o\u010daralo je miris koji se oslobodio iz zagrijane mje\u0161avine meda i vina. Kuhinju mi je ispunio miris kombinacije vo\u0107ne svje\u017eine gra\u0161evine i cvjetne slatko\u0107e meda. Isti miris ispunio je moje mirisne pupoljke i prilikom konzumacije dok je pikantnost papra i aromati\u010dnost lovora lagano \u0161kakljala moje nosnice. Osjetila sam i nepoznati, blago zemljano-cvjetni miris, pa sam pomislila da je to od \u0161afrana.<\/span><\/p><p><span style=\"font-weight: 400;\">Boja dobivenog za\u010dinjenog vina bila je mutna \u017eu\u0107kasto-naran\u010dasta s primjesama crvene (nisam uspjela prosijati sav \u0161afran), s blagim slojevima pjene na vrhu. Izgledom me podsje\u0107a na <\/span><i><span style=\"font-weight: 400;\">craft<\/span><\/i><span style=\"font-weight: 400;\"> pivo jedne lokalne samoborske pivovare, no miris ovog vina me svakako vi\u0161e zove na konzumaciju od spomenutog piva.<\/span><\/p><p><span style=\"font-weight: 400;\">Sa svim ovim mislima, krenula sam u ku\u0161anje moderne verzije <\/span><i><span style=\"font-weight: 400;\">conditum paradoxum<\/span><\/i><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p><h4><b>Reakcija?<\/b><\/h4><p><span style=\"font-weight: 400;\">Pozitivna od prvog ispijenog gutljaja ove slatko-blago kiselkaste kombinacije. Prvo me podsjetilo na okus medovine iliti gvirca, no svaki sljede\u0107i gutljaj brisao je ovu prvu pomisao. Gvirc ima ve\u0107u gor\u010dinu i tamniju boju jer u njega ide specifi\u010dna vrsta meda (kesten ili medljika). No, mo\u017eda bi i ova moderna ina\u010dica rimskog vina imala o\u0161triji okus da sam koristila mastiku. Ovako je puno sla\u0111i od gvirca, dodatno jer idu i datulje.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Kao \u0161to sam i pretpostavila, lovor i papar doprinose pikantnosti, no ne previ\u0161e. Osje\u0107a se lagani papreni <\/span><i><span style=\"font-weight: 400;\">after taste<\/span><\/i><span style=\"font-weight: 400;\">. Osjetila sam u pozadini i neku zemljanu notu, pa sam povezala taj okus sa \u0161afranom.<\/span><\/p><p><span style=\"font-weight: 400;\">Sve u svemu, jedna zanimljiva rapsodija okusa koji se savr\u0161eno nadopunjuju u jedinstvenu cjelinu. U originalnom receptu ne pi\u0161e kako se to\u010dno servira, hladno ili toplo. Probala sam obje verzije. Preporu\u010dila bih konzumaciju ohla\u0111ene verzije kao osvje\u017eenje u vru\u0107im danima. Osim toga, mo\u017ee poslu\u017eiti i kao aperitiv.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Topla verzija podsje\u0107a na adventsko vrijeme, fritule i klasi\u010dno kuhano vino. Hladni dani su nam stigli, stoga preporu\u010dam da u toplini svoga doma probate drevni <\/span><i><span style=\"font-weight: 400;\">conditum<\/span><\/i><span style=\"font-weight: 400;\"> umjesto klasi\u010dno pripremljenog kuhanog vina.
