Povodom obilje\u017eavanja 100. obljetnice, izdana je nova <em>Hrvatska kuharica. <\/em>Me\u0111utim, kako su se kulinarske okolnosti promijenile, ovo novo izdanje donosi stare recepte malo prilago\u0111ene kuhinjama iz 1876. Tako se, primjerice, umjesto kuhana mlijeka koristi slatko vrhnje. Navedeno nam\u00a0 odgovara jer su recepti sli\u010dni onima iz dana\u0161njih kuharica.<\/p><p>U nastavku \u010dlanka donosimo recept te \u0107ete mo\u0107i vidjeti kako je tekla priprema ovog osvje\u017eavaju\u0107eg deserta, no prije toga ide kratki uvod u povijest kave!<\/p><h4>Od napitka iz predaja do blagoslovljenog napitka<\/h4><p>Te\u0161ko je to\u010dno odrediti kada je otkrivena kava i sve njezine prednosti, ali zato postoje predaje koje popunjavaju povijesne praznine.\u00a0Jedna od njih vodi nas stolje\u0107ima unazad, u Etiopiju. Pastir Kaldi zamijetio je ne\u0161to vrlo neobi\u010dno. Kada su njegove koze jele plodove odre\u0111enog drveta, postale su \u017eivahnije i energi\u010dnije. Odlu\u010dio je napraviti napitak od plodova tog neobi\u010dnog drveta. Ubrzo je shvatio da mu je upravo taj napitak pomogao da ostane budan i koncentriran tijekom ve\u010dernje molitve! Otkri\u0107e je podijelio s ostalim opatima i tako se, prema predaji, pri\u010da o kavi po\u010dela \u0161iriti. Nakon \u0161to je stigla do Arapskog poluotoka, njezino putovanje do ostatka svijeta bilo je nezaustavljivo!<\/p><p>Do 16. stolje\u0107a su u kavi obilno u\u017eivali stanovnici Perzije, Egipta, Sirije, Turske itd. Ispijala se u domovima, ali i u <em>qahveh khaneh, <\/em>odnosno u javnim kavanama koje su se po\u010dele pojavljivati diljem Bliskog istoka. Ispijanje kave postalo je dru\u0161tveni ritual oko kojeg se ispreplitalo dru\u017eenje, informiranje o novostima, sklapanje poslova i zabava. Europljani su se sa svojih putovanja na Bliski istok vra\u0107ali s pri\u010dama o neobi\u010dnom tamnom pi\u0107u, a kava je do 17. stolje\u0107a zadobila na popularnosti i u Europi. Dio sve\u0107enstva bio je iznimno zabrinut da \u0107e ovaj napitak iskvariti pripadnike njihove kongregacije!\u00a0Kontroverze oko kave su se toliko zahuktale da je papa Klement VIII. morao sam provjeriti o kakvom je to\u010dno pi\u0107u rije\u010d i kakve opasnosti ono nosi. Dodajte slatko vrhnje, malo prokuhajte, odmaknite s vatre, pokrijte i pustite da stoji pola sata. Zatim procijedite kavu kroz sito ili platno, pa dodajte kristalni \u0161e\u0107er, promije\u0161ajte i onda umije\u0161ajte postepeno \u017eumanjke. To stavite na slabu vatru, mije\u0161ajte neprekidno mikserom dok se smjesa ne zgusne. Pustite da se smjesa ohladi, zatim je protisnite kroz sito, nalijte u \u010da\u0161e, u male zdjelice ili ve\u0107u zdjelu. Nije presladak, a okus kave je intenzivan.
